Global Food Supply and Quality Management
This course is focused on physical, chemical, and biological changes in food products during delivery, and the development of an understanding of the nature and properties of toxic substances in foods and the nature and magnitude of hazards they represent to human health. Special emphasis will be placed on the post-processing methods to preserve food quality and safety, methods of quality control, and prevention of food adulteration.

MBS Externship Exchange
The Rutgers Master of Business and Science (MBS) degree program provides a unique experience for its students and is now open to MBS Alumni entitled the MBS Externship Exchange. Organizations provide students with design thinking-related projects ranging from market research to data analytics to product or website redesign or product packaging, or other data-driven projects. This experiential learning initiative provides learners with real-world experience and mentoring from companies, large and small. All projects and teams are directed by the Externship Coordinator, Dr. Nelson, and the Advisor Team including Dr. Karen Bemis, Dr. Rupa Misra, Abbe Rosenthal, and Lori Dars.
Students and alumni can expect to work remotely on teams for 8-10 hours per week and run over the course of the semester (Spring, Summer, Fall). Students meet on campus (or online) on a biweekly basis to work on research, team, leadership, and data presentation skills. Some companies require students to sign confidentially agreements.
Special Topics: Alcoholic Beverage Regulation: Wine, Beer, and Spirits
This course will introduce students to the legal and regulatory systems that govern the production, labeling, distribution, and sale of alcoholic beverages, including wine, beer, and spirits. The course will highlight key issues in the structure and application of the patchwork of the more than 4,000 alcoholic beverage laws and regulations in the United States. Students will also receive an introduction to the roles played by legal systems and lawyers in interpreting laws and regulations, adjudicating disputes, and advancing policy. The course will be presented by practitioners who have represented companies in the industry and will present industry as well as consumer and government perspectives.
